Episode 1 : Pizza Making Record

In 2008 in Gulfport, Mississippi, Domino’s Pizza general manager Donnie Rush set a Guinness World Record for Most 12-inch Pizzas stretched, sauced, cheesed and fired in one hour by making 142 – beating the previous record by 49. That is one pizza every 25 seconds. To aid in his quest, Bob assembles a dream team of Toronto pizza maestros. But when it comes time to go for the record in front of a live audience at Toronto‘s Corso Italia Festival, he is all on his own. Will Bob succeed or will he be stretched to the max?

Massimo Capra’s Puttanesca Pizza Sauce

For four people
• 1 cup crushed san Marzano tomatoes
• 2 cloves garlic, minced
• ¼ teaspoon crushed chili pepper flakes
• 2 tbsp tomato paste
• 1 tablespoon capers, drained and patted dry
• 6 anchovy fillets
• Salt & black pepper to taste

Pass the tomato sauce trough a food mill to remove all the seeds and set aside.
Preheat a skillet, in it add olive oil, garlic, anchovies, capers and cook until the anchovies have dissolved then add the chili peppers and tomatoes, cook for about 15 minutes at medium heat stirring occasionally, correct the seasoning with salt & pepper if needed, once cooked remove from the stove and allow to cool to room temperature.
Place the sauce in a blender and puree until creamy, use at once.

Yield: makes enough for 2 pizza 4oz of sauce per pizza

Nota Bene:
If this sauce is used for a pasta, black olives are also a great addition to this sauce — use ½ cup of halved black Moroccan olives, and add them to the sauce in the beginning stage along with the capers and do not blend or it will discolor.
